Why Highland Beef is Special
Our steers are Natural , Grass Fed, and Grass Finished Pure Breed Highlands. Limited availability in 1/2 or whole.
We charge $5 / lb (current market rates) hanging weight due before pick up. Beef pick up arrangements and processing fee is paid separately between you and the butcher.
Highland beef is naturally leaner with marbling because their thick hair provides insulation, so they store fat within the muscle rather than as a thick external layer, resulting in tender, succulent, and nutritious meat.

At Highland Dale, we offer Highland steers raised within our established cattle program for buyers seeking pasture-raised animals with a known management history. With more than 10 years focused exclusively on breeding Highland cattle, our operation emphasizes consistency, experience, and familiarity with the breed.
These steers have been raised on pasture and managed according to our standard husbandry practices. Animals are offered at an age commonly selected for processing, based on buyer preference and intended use.
We value clear communication and accurate representation. Buyers are encouraged to review all available information and conduct their own evaluations to ensure the cattle meet their individual needs and expectations.

Payments
A non-refundable deposit of $200 is required to reserve the steer and processing date.
The remaining balance will be calculated using the final hanging weight as determined by the butcher at a rate we will share with interested parties $X.00 per pound (based on current market rate).
The remaining balance is due upon hanging weight confirmation and prior to release of meat by the processor.
Failure to remit payment in full may result in delayed release of meat and/or cancellation of future sales.
This transaction constitutes the sale of live livestock for custom processing under Missouri and federal law.
Highland Dale does not sell inspected meat and does not offer meat for resale.
The animal is processed under custom-exempt processing, and all meat produced is for the exclusive use of the buyer, their household, and non-paying guests.
Resale of any portion of the processed meat is strictly prohibited.
Processing is performed by the butcher, an independent third-party processor.

Cut selection, yield, or packaging

Differences between live weight, hanging weight, and finished take-home weight
All hanging weights recorded by the butcher are final and binding for pricing purposes.
Ownership of the steer transfers to the buyer upon delivery to the butcher for processing.
At that time, the buyer assumes all responsibility for the animal and all resulting meat products.
